Chris Burt, who is Executive Chef at Momo No Ki, a Japanese ramen noodle bar in Shrewsbury, will fly off on Friday for a three-week fact-finding mission.

During his time in Japan he will also help teach street children to cook by working with the charity Courageous Kitchens.

Mr Burt, who is also the Executive Chef at The Peach Tree and Havana Republic, said: "I'm flying out to the Far East on Friday and will spend three weeks in Japan and Thailand.

"The purpose of the trip is twofold. We take our food seriously here at Momo No Ki and so I'm going to do a lot of research and development while I'm in Japan. I'll be eating at some great restaurants, visiting Tokyo's world famous fish market and also visiting a place that makes ingredients like kombu.

"I'm keen to learn new ideas that can improve our offering here at Momo No Ki."

However, Mr Burt added that he would also be doing his bit to help local street children during his trip.

He said: "I'm flying to Bangkok initially and I'll spend five days working for a charity called Courageous Kitchens, where I'll be teaching Burmese and Thai orphans how to cook.

"I'll also be helping them to improve their English, so that they have a better chance in life. The charity aims to get youngsters off the streets and I'll be helping where I can."

Mr Burt added that he would then spend time in different parts of Japan, including a length stint in Tokyo.

"I'm really looking forward to visiting the world-famous fish market, which should be incredible.

"I've travelled extensively through the Far East and last year I worked with the charity Daughters Rising, which helps victims of sexual abuse. This time, I'm looking forward to learning more about authentic Japanese food and also helping street kids."
