Ceviche de Ostiones

Then let a little South American explorative chemistry into your garden with an Errazuriz ceviche salad and wines.
Ceviche is a seafood salad popular in many Latin American countries, particularly Chile. The fish is ‘cooked’ by marinading it in citrus juice.
The juice creates a chemical reaction in the fish essentially cooking the flesh. Shellfish and fin fish can be used.
Ceviche de Ostiones (Scallop marinated in lemon juice)
- One pound of fresh scallops
- Two cups of lemon juice
- One cup of orange juice (or can use orange segments – optional)
- One cup of onion, finely julienned
- Cup of green onions, finely chopped
- Cup of carrots, julienned
- One cup of sweet red pepper, julienned
- One cup of sweet green pepper, julienned
- Three garlic cloves, finely minced
- One tablespoon of green chilli sauce
- One cup of plum tomatoes, peeled, diced, and seeded
- Freshly ground black pepper, to taste
- Cup of fresh coriander, finely chopped
- Olive oil to taste
Method:
In a glass or ceramic container, marinate scallops in one and a half cups of lemon juice for two hours in the refrigerator. Make sure the scallops are totally submerged in the lemon juice.
After this time (or if it is the case, when you can see the change of colour in the fish) discard the lemon juice, and put them into a clean glass or ceramic container.
Cover with the remaining lemon and orange juice, add the rest of the ingredients, mix and keep in the refrigerator for one hour before serving.
Garnish with coriander, and serve cold. They will keep in the refrigerator for up to 24 hours.
