Hygiene fines for Chinese takeaway

A Telford Chinese restaurant where health inspectors found dirt and food debris under units was today fined £3,500.Environmental health officers who visited Tin Tin Cantonese Restaurant in Donnington also found cooked chicken wings stored at room temperature for more than 12 hours, a court heard.
Henry Lui, secretary of Birmingham firm Canton Palace Ltd, which owns the Wellington Road restaurant, today admitted 10 food hygiene charges committed on April 25 last year.
Telford magistrates also ordered Canton Palace Ltd to pay £1,375 costs.
They told Mr Lui they were pleased to note the improvements but added they were serious charges.
Lorraine Fowkes, prosecuting, told the court that Telford & Wrekin Council environmental health officers on a routine inspection found the kitchen floor was damaged and lifting, with food debris underneath.
Miss Jenny Loynton, mitigating, said her client had bought the business in 2007 for his son and had taken on the staff there at the time in good faith.
Mr Lui had not been aware of the problems but came out of retirement when he found out about them and had employed a new head chef. He had also spent just over £7,000 on replacing equipment and making repairs at the restaurant, which now had a deep clean once a week.
